Chablis ‘Cuvée Saint Pierre’ 2023, Domaine Dauvissat

DescriptionStretching over 22 hectares of Northern Burgundy, this vineyard encompasses 53 separate plots spread over both sides of the Serein Valley and includes 7 different areas covering 3 of the 4 Chablis appellations. This estate is currently making an effort to turn towards a more eco-friendly approach to farming. As such, they only intervene when strictly necessary and even then they do so as little and as naturally as possible.Insecticides are also no longer the norm and organic pesticides are used only when strict conditions apply. Grass is grown between the vines to help enrich the soil. Each wine is vinified by geographical area and left to age for 2 years before being sold. This allows the wines time to mature without rushing them.
