Genetic propensity to the formation of fat layers in the muscle tissue makes the meat “marble”. On our farms, bulls receive natural grain nutrition, under the supervision of farm workers. Under grown bulls and heifers grow up to 12-15 months in natural conditions on ecologically clean pastures with perennial herbs and clean water. At a weight of 350 kg, they go to the feedlot, where they almost double their weight in 250 days. Nowadays our herd exceeds to 900 000 head which makes it the largest herd of its kind in the world. Marbled Meat Marbled meat got its name due to the thin fatty layers in the muscle tissue. Texture of this meat resembles the natural pattern of marble. During cooking these fusible fat layers melt, filling the meat with delicious taste and giving it an additional juiciness and softness. The number of thin fat layers in the meat determines the level of its marbling – “grade”. The greater the gloom, the higher the grade, the tastier and juicier the finished dish is.
